I don’t have pictures but this soup is absolutely delicious :) and quite simple as well!
I used a base of condensed tomato soup (like Campbell’s) and a mushroom broth I made at home using the stems of the mushrooms; however you can skip the broth and still have a great soup.
If you do want to make the broth, just take some water and add in the stems of mushrooms and let it come to a boil, then bring it down to a simmer for about a half hour to an hour. (If you want to make a veggie broth, just add in some carrots, celery and hard squashes and there you go :])
For the rest of the soup you’ll need:
add that and a big (family sized) can of condensed tomato soup
add three to four times as much water
add two small bay leaves (or one large one)
1 can of white beans
1 can kidney beans
couple tablespoons spinach
half box of small shells pasta
2 small potatoes diced
2 small red peppers diced
2 tsp salt
1 tsp pepper
1 tbs olive oil
In a large pot, heat up some olive oil and saute the potatoes until they have a bit of color. Then add in the red bell peppers to saute them as well. Then add in the mushrooms and let them cook down a bit. Then add in the soup, mushroom broth and all of the water. (If you don’t use the broth, add 4-5 amount of water instead of 3-4.)
Let the soup come up to a boil and then put the heat back down so the soup is simmering.
Then add in the bay leaves and let it cook for about 20 minutes. Then add in the pasta and let it cook for an addition 15 or so minutes.
Soup is great for cold days and I love it even heated it up, so make a big batch and stash it in the refrigerator. Eat with bread, cheese, tortilla chips, or whatever additional add ins you like :)
It’s also great for parties, because you can leave it on the stove and it will stay warm, but not much will cook out and if you start running low on liquid, add in some more water and salt and the soup will still taste great.
