My mom makes these spinach puffs that are really yummy. She only puts spinach and corn in it, so I decided to add my own flair on it. I added some more veggies to it and a hint of spice.
So here’s what you’ll need:
2 cups frozen spinach
1 cup water
1 tbs olive oil
1 cup corn
10 oz mushrooms
1 medium bell pepper
1 roasted pepper (packed in water or you can roast your own)
salt & pepper to taste
pinch of crushed red pepper flakes
1 tbs paprika
1 cup cheese (i mixed mozzarella & sharp yellow cheddar)
1 sheet of Puff Pastry
Put the water and spinach into a pot with some salt and let the water cook off.
Meanwhile, saute the remaining veggies. Put some oil in the pan, some crushed red pepper flakes and a little bit of freshly ground pepper and let it heat up. Then add the peppers; add some salt to help it cook down quicker.
I cooked my veggies individually, but you could easily cook them all together, just go in the same order. (Always start with the veggie that will take longer to cook, so it will continue to cook as you add the other veggies.)
Cook down the mushrooms. (Adding salt will flavor, as well as pull out water of the veggies.)
Last, just heat up the corn a little bit because it should be already cooked.
Chop up the roasted red pepper and mix up all the veggies. Then let it drain. To speed that up, put some pressure on it. Then add in the cheese and the paprika and mix again.
Take the puff pastry out and roll it out a little bit. Cut the pieces into squares. I used the seams to cut it into thirds and then cut each third into four pieces. Then take each square, put a heaping tablespoon of the mixture on it and fold it over and pinch the sides together.
Then I put four of these pockets on one sheet tray for the toaster oven.
Put the toaster oven on 400 degrees and let it cook until golden brown. (like this)
Eat alone or serve with ketchup. Enjoy :)
